Holiday Cookies!
2020 has been an unusual year and for us, a with a slightly backward holiday season. In the before-times, the girls spend Christmas Eve with me and we go to our neighbor's solstice party. Then, opening presents on Christmas morning with Nana and before the kids head to their dad's before a week away with family while I travel to somewhere warm. This year, it's like opposite day. No travel. No party. Opening presents on FaceTime with Nana.
However, baking holiday cookies on Christmas Eve happened. At least we managed to bake them before actual Christmas Day.
The kids decided to make snickerdoodles and we ordered red and green sprinkles in our grocery order. We got pink, purple and white sprinkles instead and made the most festive cookies we've ever made.
The recipe we used called for vegetable shortening, not butter, so we didn't even need to make any substitutions. However, we decided to double the recipe and didn't have enough shortening so we used two sticks of fake butter (softened) to supplement. I like the Earth Balance sticks for baking. They have the best consistency that I've found. (No promo - just preference.)
